Snickerdoodle Smoothie Bowl
Serves 2
Ingredients
- 2 tbsp raw cacao powder
- 4 dates (soaked)
- 2 tbsp peanut butter
- 3 medium bananas (frozen)
- 120 ml plant milk (oat, soya, or almond)
- 1 scoop chocolate powder
Toppings (choose as desired):
- 2 tsp cacao nibs
- 3 tbsp granola
- 2 tsp date syrup (or similar)
- 3 tbsp yoghurt
- 1 pinch cinnamon (for sprinkling)
Instructions
☘ Tip
For the best texture, use bananas that have been frozen for at least 2 hours
- Soak the dates in a little water
- Add the raw cacao powder, dates, peanut butter, frozen bananas, and plant milk to a high-speed blender.
- Blend all ingredients until completely smooth and creamy. You may need to stop and scrape down the sides of the blender once or twice to ensure everything is well combined.
- The consistency should be thick enough to eat with a spoon - if it’s too thick, add a little more milk; if too thin, add more frozen banana.
- Pour the smoothie mixture into a bowl and arrange your chosen toppings on top in an attractive pattern.
- Serve immediately whilst the smoothie is still cold and thick.
ℹ Note
The smoothie bowl is most enjoyable when served immediately, but you can make the base mixture the night before and store it in the fridge, then add toppings just before serving.
